The cook has to make the call before the book renders: this is the hand of the boutique route, not a template the system picks. Copy lead: 'Layout. The shape of the book.' Selected thumb carries the ochre hairline ring. Available again later from Settings if the cook changes their mind in Preview.

A right-nav 'Settings' mark opens the sub-flow: Title / Subtitle / Layout / Recipes — Layout still lives there too, for revisiting after seeing the book.
